Ive used the mask edit for a phone number. Everything works as it should and the number is entered on the form as (012) 345-6789.  My question is...Is there anyway to store the number in the database or user profile in this case as 0123456789 ?

I don't think there is a direct way of doing this. I think you need to probably run a SQL event to remove those characters or s client side event to pass those details over to another field and then map that filed to out DNN core property.
